Pulled pork is made from the shoulder part of the hog. The pork shoulder is typically cut into two parts, the Boston Butt and the Picnic Roast. These are both fatty pieces of pork. The fat keeps the pork moist while smoking it. We than apply a flavorful rub and let it sit for at least an hour. Let the smoking begin, the meat is slowly cooked over wood for several hours until it can be shredded with a fork. Remove and begin pulling, the meat is so tender at this point that it can be shredded by hand. The tender pork is lighttly coated with our house barbeque sauce and is ready to serve. |
